
Amaranthus are easy to grow and require well-drained soil. They thrive well in hot summer. The only pest that, I need to keep an eye on would be grasshoppers.

Harvest the leaves before it starts flowering. I’ve two varieties – Green and Red Amaranth.
They are rich source of Manganese. When steamed, and mashed with a handful of dal along with the seasoning of mustards and red chillies, they taste incredibly delicious.
